to The Hideaway

We opened our food truck in September 2023, driven by passion, resilience, and a deep love for Maui and its food culture. Just weeks after the devastating fires, we launched during one of the most uncertain times this island has ever faced. Despite the odds, we pushed forward—driven by our mission to serve quality, soulful food to our community.
Who We Are
Chef Allen was born and raised in Maui and has been cooking professionally here for over 20 years. His experience spans kitchens across the entire island — from resorts to local favorites — building a deep understanding of local ingredients, techniques, and flavors. His food tells a story of tradition, pride, and innovation.
Shelby was born and raised in Southern California and moved to Maui 14 years ago. With a strong background in hospitality and customer service, I’ve worked side by side with Allen to bring our shared vision to life — starting small, but dreaming big.
Our Achievements So Far
In just our first year of operation, we received an Honorable Mention at the 2024 ‘Aipono Awards for best food truck.

After outgrowing the food truck and seeing how our food resonated with both locals and visitors, we’re ready to plant deeper roots. The Hideaway by Aloha Prime is a natural evolution of our journey — a cozy, elevated space where we can share our food in a way that’s warm, interactive, and unforgettable.
